Make Something Monday- Parmesan Chicken

This is one of my go-to recipes. The only thing that takes any time at all is if you forgot to take out the chicken to thaw. =)
I don’t remember where I found this recipe, but I don’t have it anymore. I have been making it long enough I just eye everything (it’s so easy), so the measurements may be a smidge off, but close enough.

Parmesan Chicken

3-4 large boneless skinless chicken breasts
1/2 cup mayonnaise (I prefer Kraft real mayo, but I’ve also used Best Foods) Do not use low fat, as it will not work
Shredded Parmesan Cheese
1 cup bread crumbs

Preheat oven to 400 degrees. In a small bowl, mix together the mayo and about 1/4 cup of parmesan cheese (I usually do more since it’s so good!!).
Place chicken in baking dish. (I usually pound the chicken first, since it makes it more tender, but it’s up to you).

Cover chicken with mayonnaise mixture. Top with bread crumbs. Sprinkle more (yes more!!) parmesan cheese on top and place in oven. Cook for 20 minutes or until the chicken is cooked through (juices will run clear).

When I made this a few weeks ago, I realized I was out of breadcrumbs!! My mom asked if I had any croutons so I could skip the trip to the store. So I ended up using Cesar croutons. They made it taste amazing! It takes a little longer (to crush them up), but it’s worth it! I made it again the other day and used Italian breadcrumbs, and those were very good too.

The kids love it too!!
