Make Something Monday- Meatball Sub Casserole

I got this recipe courtesy of my Aunt Jenn. Don’t know where she got it from, but it’s goo-ood!

Meatball Sub Casserole

Ingredients

Meatballs:
1/3 cup chopped green onion
1/4 cup seasoned bread crumbs
3 Tbs. grated Parmesan cheese
1 pound ground beef

1 loaf Italian bread, but into 1 inch slices
8 oz cream cheese, softened
1/2 cup mayo
1 tsp. Italian seasoning
1/4 tsp. pepper
2 cups shredded mozzarella cheese, divided
1 jar (28 oz) spaghetti sauce
1 cup water
2 garlic cloves, minced
To make meatballs: In a bowl, compine ontions, brumbs and parmesan cheese. Add beef and mix well. Shape into 1 inch balls; place on a rack in a shallow baking pan. Bake at 400 degrees for 15-20 minutes or until no longer pink. (OR you can take the easy way out like me and use frozen meatballs! I prefer the Costco brand, but we used Armor brand this time and it was still yummy.)
Meanwhile, arrange bread ina single layer in an ungreased 13x9x2 inch baking dish (all of the bread might not be used).
Combine cream cheese, mayo, Italian seasoning and pepper; spread over the bread. Sprinkle with 1/2 cup mozzarella. Combine sauce, water and garlic; add meatballs.

Pour over cheese mixture; sprinkle with remaining mozzarella.

Bake, uncovered, at 350 degrees for 30 minutes or until heated through.
NOTE: Do not use light or fat-free mayonnaise!

  3. Ooooo…it is YUMMY!!!! I think I got it from a Taste of Home magazine years ago. I, too, have gone rogue and get the premade meatballs. My kids have been BEGGING for this lately…maybe I should stop by for dinner tonight?? I'm planning on Parmesan Encrusted Chicken tonight, if I can ever get to the store ($1.69 lb chicken breast @ Fry's!)

  9. Ok girlie I so made this last night for dinner :). The boys LOVED it, even the hubs liked it and he's hard to please!

    I had a good amount left over so I of course took it to daycare and they had it for lunch and loved it!

  14. I saw this recipe in Quick Cooking magazine and made it for dinner last week – it was a HUGE hit! My daughter at the leftovers for lunch twice in a row! :)

  15. oops – forgot to proofread – that should say ate the leftovers, not at!

  16. Oh, one more thing – I know the recipe says not to use light mayo, but that’s all I ever buy, so that’s what I used – and it turned out just fine. Not sure why the recipe says you can’t use it!
