OK, since I posted the pictures for this recipe I made last weekend, I've had a few requests for the recipe! So here it is! This was taken from the cookbook "Easy Everyday Cooking" by Better Homes and Gardens. LOVE this cookbook, by the way!
Ingredients:
1 cup all purpose flour
1 tablespoon brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1/4 cup butter
1/3 cup milk
1/2 cup finely chopped walnuts
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1 tablespoon butter, melted
2/3 cup packed brown sugar
4 teaspoons cornstarch
1/2 teaspoon finely shredded lemon peel (I didn't have this and it was amazing without it)
6 cups sliced peeled peaches OR 6 cups frozen unsweetened peach slices
2/3 cup water
Directions:
For biscuits, in a medium mixing bowl stir together flour, 1 tablespoon brown sugar, baking powder, salt, and baking soda.
With a pastry blender, cut in 1/4 cup butter until the mixture resembles coarse crumbs. Make a well in the center. Add milk all at once. Using a fork, stir just until dough forms a ball.
On a lightly floured surface, knead dough gently for 10 to 12 strokes. Roll or pat dough into a 12x6-inch rectangle. Combine walnuts, 3 tablespoons brown sugar, and cinnamon. Brush dough with melted butter and sprinkle with nut mixture. Starting from a short side, roll up jelly-roll style. Seal edge. Cut into six 1-inch slices. Set aside.
For filling, in a large saucepan stir together 2/3 cup brown sugar, cornstarch, and lemon peel. Add peaches and water. Cook and stir until thickened and bubbly.
Pour the hot filling into an ungreased 2-quart rectangular baking dish. Arrange the biscuit slices, cut sides down, on hot filling. Bake in a 375 degree oven about 25 minutes or until biscuits are golden brown.
Makes 6 servings.
Easy peasy! I have more peaches I need to use and, although the thought of trying something else sounds good, this was SO good that I am thinking I'll do this again (except I'll do more cinnamon rolls! You know, so it's even worse for my thighs...).
Enjoy!

If I had peaches, I'd definitely make this! I wonder how it would work with apples... :-)
ReplyDeleteThat looks gorgeous! Sadly, the last couple of peaches I've bought have been really mealy so we might be out of season already.
ReplyDeleteThanks for this recipe. I started drooling when I saw the picture! Thanks for asking about the scavenger hunt..we did do it with the kids, there were about 25 kids under age 9, and they had a blast! I was so busy organizing them and making sure everyone had what they needed I forgot all about taking pictures! The very last item on their list was "a song". As each of them brought me their loot bag I asked them to sing me a song. That was the best. Lots of fun and happy faces!
ReplyDeleteI should make something like this! yum!
ReplyDeleteI'm so going to make this this weekend :)
ReplyDeletePeaches are my absolute favorite! This looks delish!
