Chicken Waldorf Pitas

I love this recipe! It is so tasty and the perfect meal for summertime!

Ingredients:

1 20oz can of crushed pineapple in juice (Do not drain, some juice will be used!)
2 whole chicken breasts,chunked
1 red apple, cored and chunked
1 green apple, cored and chunked
1 cup sliced celery
1/3 cup green onion, sliced (optional)
1 cup mayonaise
1/2 tsp vanilla extract
1/2 tsp fresh grated lemon peel
8 to 10 pita bread rounds
** This time I added a handful of green grapes, sliced in half. YUM! You can also add raisins or craisins too!

Directions:

-Drain pineapple well, pressing out excess juice, saving 1/4 cup
-In a large bowl, combine pineapple, chicken, apples, celery, and onion.
-In a small bowl, whisk together mayonaise, pineapple juice, vanilla extract, and lemon peel.
-Pour over chicken mixture and toss well.
-Serve in halved pita bread rounds. Add lettuce if desired. **

**I prefer to refrigerate the mixture for at least 30 minutes before serving to let all the flavors combine.
