Fun With Food Friday: World’s Best Lasagna

World's Best LasagnaIt’s taken me a while, (I tend to be late to the party more often than not), but I’ve finally fallen in love… with Pinterest.  I mostly use it for recipes, and so far I haven’t had a loser recipe yet.  Here is my latest find, tweaked a bit to our liking.  It really IS the World’s Best Lasagna!

This recipe makes enough for my family of 6, plus leftovers (which we enjoyed today, COLD and SO good)!  In this recipe you make your own sauce, none of this Ragu nonsense.  I use this sauce recipe when I make spaghetti now too; it is SO much better than the canned stuff, and super easy!  Just be sure and give yourself some extra time; it takes 1 1/2 hours for the sauce.

Ingredients
  1. 1lb sweet Italian sausage
  2. 1/2 cup minced onion
  3. 2 cloves garlic, crushed
  4. 1 (28 ounce) can crushed tomatoes
  5. 2 (6 ounce) cans tomato paste
  6. 2 (6.5 ounce) cans canned tomato sauce
  7. 1/2 cup water
  8. 2 tablespoons white sugar
  9. 1 1/2 teaspoons dried basil leaves
  10. 1/2 teaspoon fennel seeds
  11. 1 teaspoon Italian seasoning
  12. 1 tablespoon salt
  13. 1/4 teaspoon ground black pepper
  14. 4 tablespoons chopped fresh parsley (I didn't have this, as you can see by the photo)
  15. 12 lasagna noodles
  16. 16 ounces ricotta cheese
  17. 1 egg
  18. 1/2 teaspoon salt
  19. 3/4 pound mozzarella cheese, sliced (I used grated 'cause that's what I had)
  20. 3/4 cup grated Parmesan cheese
Instructions
  1. Brown sausage. Add onion and garlic just as it's finishing and cook over medium heat until well browned.
  2. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley (if you have it).
  3. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  4. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water (this will keep them from sticking together).
  5. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  6. Preheat oven to 375 degrees F (190 degrees C).
  7. Spray a 9x13 inch baking dish with non-stick cooking spray.
  8. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish.
  9. Arrange 6 noodles lengthwise over meat sauce.
  10. Spread with one half of the ricotta cheese mixture.
  11. Top with a third of mozzarella cheese.
  12. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese.
  13. Repeat layers, and top with remaining mozzarella and Parmesan cheese.
  14. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  15. Bake in preheated oven for 25 minutes.
  16. Remove foil, and bake an additional 25 minutes.
  17. Cool for 15 minutes before serving.
