Recipe: Delicious Creamy Coleslaw

We’ve been having a lot of pulled pork sandwiches around here lately.  My dad had a smoker, and when he passed away we got it.  We’ve been smoking chicken and pork and ribs and it’s been amazing.  Smoked pork turns into amazingly delicious pulled pork sandwiches.
However, a pulled pork sandwich just isn’t as good without coleslaw!  I have a recipe I usually always make, but this last time Gary requested a creamier coleslaw, “…like KFC coleslaw”.  So I googled KFC Coleslaw and found a yummy recipe!  This one called for buttermilk, but we didn’t have any.  I checked to see if I could use heavy cream instead (we had that) but nope, that wouldn’t do.  Then I learned that I could make my own buttermilk.  It’s made with milk and either vinegar or lemon juice, (both of which are in this recipe), so I decided to use the recipe but omit the buttermilk and see how it turned out. It was so good, and will now replace the old recipe I used to use.
Here is the recipe, with the few tiny changes I made to fit what we had and wanted.

Delicious Creamy Coleslaw

Ingredients
1/2 cup mayonnaise
1/3 cup sugar
1/4 cup milk
2 1/2 Tbsp lemon juice
1 1/2 Tbsp white vinegar
1/2 tsp salt
1/8 tsp black pepper
8 cups finely chopped cabbage (about 1 head)
2 cups shredded carrot
Directions
Combine mayonnaise, sugar, milk, lemon juice, white vinegar, salt and pepper in a large bowl and beat until smooth.  
Add the cabbage and carrots and mix well.

Cover and refrigerate for at least 2 hours.

It’s amazing on it’s own, but on a pulled pork sandwich it is heaven!

  1. Yum.. I love cole slaw, and the smoked pork sounds awesome. Never thought about buying a smoker.. I'll have to look into that. 😉 I don't like alot of cole slaws from the grocery store or restaurants, but I do love KFC's slaw. I'll have to try this recipe!

    I like to add a dash of celery salt or poppy seeds to cole slaw, too. And pulled pork is the best! You can use it for quesadillas or enchiladas, too- just change the sauce.
