Recipe: Creamy Cucumber Salad

Creamy Cucumber SaladI’ve mentioned before that my husband is a great cook.  This cucumber salad recipe is one he made for my mom and I when he and I started dating, and we’ve all loved it since!  We make it often, especially in the summertime. Not only are cucumbers in season during the summer, but it is such a cool, refreshing side dish.  It’s so good even the kids ask for it, and if I’m not careful it’s gone before I get a second helping because they’ve had seconds, thirds and sometimes fourths of the cucumber salad!

  1. -1 large cucumber
  2. -1/4 cup red onion
  3. -1/4 cup mayonnaise
  4. -1 teaspoon celery salt
  5. -1 teaspoon dill weed
  6. -1/4 teaspoon cajun seasoning
  7. -1 teaspoon onion powder
  8. -1/8 teaspoon ground black pepper
  1. - Peel and slice cucumber, slice onion, set aside
  2. -Mix together remaining ingredients in serving bowl
  3. -Just before serving, add cucumber and onion to mayonnaise mixture, garnish will more fresh dill and serve! (If you combine too soon, the salt will draw out the water from the cucumber and the salad will become very watery.)

  3. I believe your recipe for cucumbers is finally the tasty recipe I have been looking for. My cucumbers are tasteless. I have never tried any of the ingredients your recipe has in it and it sounds so tasteful. I can't wait to try it.

    Oh this looks so good and refreshing! I love cucumber salads minus the onions. LOL….I cant do onions but I think this would be delicious!!! Thanks for the GREAT recipe!

    I use to make cucumbers similar then I lost the recipe. So glad you shared because my mom use to make them. They are so good only hers didn’t have the cajun seasoning in it. That sounds great to me
