Recipe: Crock Pot Pork Stew

Crock Pot Pork StewBoneless pork tenderloin was on mega sale recently, so I bought quite a bit. One of the ones we bought was 11 pounds (!), so I baked half of it for dinner one night and then decided I wanted to make a stew with the other half.

Ingredients
  1. 5lbs boneless pork tenderloin, cut in 1 inch pieces
  2. 3 cups chopped celery
  3. 3 cups chopped carrots
  4. 3 large yellow potatoes, cut in chunks
  5. 1 large yellow onion, chopped
  6. 2 cloves garlic, minced
  7. 6 cups low-sodium chicken broth
  8. cilantro (for garnish, or more if you like)
Instructions
  1. Combine all ingredients (less the cilantro) in crock pot and cook on low for 8 hours (or high for 4 hours).
  2. Top with cilantro and enjoy!

Easy peasy! It is so so good, and even my kids love it (always a success if the kids love it)!  We have leftovers I’ve put in the freezer for when the weather is a bit more ‘stew appropriate’; Somehow stew just doesn’t taste as good when it’s 105* outside.  Can’t wait to see how much better it tastes when it’s chilly out!
