I love Peppermint Mocha all year long, but this time of year I love it even more. I have an awesome recipe for Mocha Chip Muffins, but decided I needed to try and tweak it to make Peppermint Mocha muffins… And I did an awesome job if I do say so myself!

Peppermint Mocha Muffins

Ingredients
- 1¾ cup flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¾ cup sugar
- 1 cup semi-sweet chocolate chips
- 1 cup strong black coffee (or 1 cup coffee plus 1 tsp instant coffee)
- ⅓ cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- ½ tsp pure peppermint extract
Instructions
- Preheat oven to 400 degrees.
- Line a 12-cup muffin tin with paper liners.
- Whisk together dry ingredients in a large bowl.
- Stir in chocolate chips.
- In a separate bowl, whisk together remaining ingredients. (If you used the instant coffee, stir until it is dissolved.)
- Add coffee mixture to flour mixture, stirring just until incorporated.
- Fill each muffin cup ¾ full.
- Bake for 18-20 minutes until tops spring back.
- Cool on a rack for 10 minutes, then remove from pan.
