Recipe: Horseradish Mashed Potatoes

We love to make potatoes with dinner. Potatoes are cheap and tasty and there’s so many ways to make them!  We especially love love love our mashed potatoes.  Not long ago we’d just make the “traditional” mashed potatoes, but then we remembered some amazing horseradish mashed potatoes we’d had from a restaurant once.  Of course we had to try to make them, and we haven’t gone back.  No more “traditional” for us baby- Let’s get spicy!! Total time:
Serves: 6
  • 7-8 medium baking potatoes, skinned and cut into 1 inch cubes
  • ¼ cup butter
  • 1 cup milk
  • ½ Tablespoon salt
  • ½ Teaspoon pepper
  • 1 Tablespoon horseradish sauce
  1. Boil potatoes in 4 qt sauce pot until tender, about 10-12 minutes
  2. Drain, return to pan and mash potatoes with mixer (turned off) until no more chunks are visible
  3. Add butter and ½ cup milk and mix on med-high until incorporated
  4. Continue to mix, adding a few tsp of milk at a time until the potatoes are at your desired consistency. (I used an additional ½ cup; we like ours fluffier)
  5. Add salt, pepper and horseradish sauce and mix
  6. Serve immediately and enjoy!
