Recipe: Fiery Chicken and Potato Fingers

With the crazy hot summer weather we always get here in Phoenix, a dinner made on the grill (and not heating up the oven and the house) is always welcomed.  Here’s a recipe we all thought was amazing!! Enjoy!

Fiery Chicken and Potato Fingers

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 tablespoons bottled hot sauce
  • 1 tablespoon honey or brown sugar
  • 3 cloves garlic
  • ½ teaspoon salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground black pepper
  • 2 large baking potatoes
  1. Cut chicken lengthwise into 3 strips. Place chicken in resealable plastic bag.
  2. For Sauce:
  3. In a small bowl, stir together oil, hot pepper sauce, honey or brown sugar, garlic, salt, cayenne pepper, and black pepper.
  4. Pour 2 tablespoons of the sauce over chicken.
  5. Seal the bag, turn to coat chicken.
  6. Marinate in the refrigerator for at least 30 minutes or up to 24 hours, turning bag occasionally.
  7. Cover and chill the remaining sauce to use as brush on.
  8. Drain chicken and discard marinade.
  9. Just before grilling, cut each potato lengthwise into wedges.
  10. Lightly brush potato wedges with some of the remaining chilled sauce.
  11. Grill potato wedges for 15 minutes.
  12. Turn potato wedges, then add chicken to the grill.
  13. Grill for 9 to 12 minutes more or until chicken and potato wedges are tender and chicken is no longer pink, turning chicken and brushing once with remaining sauce during the last 5 minutes of grilling.
  14. Discard any remaining sauce.

    Yummm! Our grill we went to use last night and we couldn’t get it to work and the tank is filled. Yikes! I would love to try this, looks super!

  10. this sounds great! I never thought of making potatoes this way, I always wrap them in foil, and the chicken recipe looks great, too!
