Slow Cooker Honey Garlic Pork Roast smI had to come up with something different for the pork roast we had in our freezer because we were getting tired of the same ol’ thing.  I wanted something that required little time and effort on my part; what better option than to throw it in the crock pot?! My husband wanted stir fried veggies and pot stickers with dinner, so this is what I made to go with it. Served over rice made it even better!

Ingredients
  • 1 (4-5 pound) boneless pork loin roast
  • 1 cup grated parmesan cheese
  • 1 cup honey
  • ¼ cup + 2 tablespoons soy sauce
  • ¼ cup olive oil
  • 3 teaspoons ground ginger (I'd have used fresh if I had it)
  • 1 teaspoon salt
Instructions
  1. Spray slow cooker with non-stick cooking spray.
  2. Place roast in slow cooker.
  3. In a small bowl, combine remaining ingredients, then pour over pork.
  4. Cover and cook on low for 6 hours or until a meat thermometer reads in internal temperature of 160 degrees.
  5. Remove meat to a serving platter and keep warm until ready to serve.
  6. Slice roast, serve over rice.
  7. Skim fat from cooking juices, drizzle juice over pork and serve.

  8. I am loving these slow cooker recipes! One question: I often have trouble with meat drying out in the slow cooker, unless there is cooking liquid. I take it that was not a problem with this recipe?

    • Hi Jean!
      No it wasn’t dried out at all, I’m guessing because the soy sauce and olive oil added the bit of liquid it needed… Additionally, at the end of cooking there are plenty of juices to pour over the pork to add a little back into it, and they taste amazing on it too! 🙂 Can’t wait to hear how you like it!

      • Well, I made this and I’m afraid it didn’t turn out as well as I hoped. Unfortunately I did not have any ground parmesan, so I omitted it. The meat, while tender and moist, was a little blah, so I guess the cheese really is essential! I am going to chop the leftover meat and make lo mein. I will try it again with the cheese!
