Recipe: Tomato Basil Soup

My entire family loves when I make this, and last time I had to triple the recipe so we could have some leftovers for later! YUM!

  1. 1/3 cup Fresh Basil, finely chopped
  2. 1 medium sweet onion, finely chopped
  3. 2 tablespoons sugar
  4. 1 tablespoon butter
  5. 1 (18oz) can Progresso Recipe Starters- Fire Roasted Tomato
  6. 3 (14.5oz) cans Muir Glen Fire Roasted Diced Tomatoes
  7. 1 (6oz) can Tomato Paste
  8. 2 teaspoons minced garlic (about 4 cloves)
  9. 3 cups chicken broth
  10. 1/4 cup Heavy Cream
  1. Cook basil, onion, and sugar in butter in a 6- to 8-quart heavy pot over medium heat, stirring frequently, until onion is softened, about 5 minutes.
  2. Add Fire Roasted Tomato starter, diced tomatoes, tomato paste, garlic, and broth and simmer, covered, 20 minutes.
  3. Purée soup using an immersion blender, or puree in batches in a blender (use caution when blending hot liquids and be sure the top of your blender is on and secured- you don't want to learn the hard way, haha). Blend to desired consistency.
  4. Stir in cream and simmer 2 minutes.
