Recipe: Taco Stuffed Pasta Shells

This is an easy recipe that I love to make when I’m running short on time.  It’s so easy to make extra and freeze for another night as well.  It’s one the entire family loves!

Ingredients
  1. 1 box pasta shells
  2. 1-1.5 pounds ground beef
  3. 1/4 cup chopped onion
  4. 1 envelope taco seasoning
  5. 1 can refried beans or refried black beans
  6. 1 cup shredded cheddar cheese
  7. 1 jar of your favorite salsa
  8. sour cream
  9. jalapenos (optional)
Instructions
  1. Cook pasta according to directions, drain
  2. While pasta is cooking, brown ground beef
  3. Add onion, taco seasoning, refried beans, 3/4 cup of the cheddar cheese, and half of the jar of salsa to the cooked ground beef and mix
  4. Grease a 9x13 pan
  5. Fill shells with ground beef mixture and place in rows in pan
  6. Pour remaining salsa on top of shells, top with the remaining 1/4 cup of shredded cheddar cheese
  7. Bake at 350 degrees for 20 minutes
  8. Serve topped with sour cream, more cheddar cheese, and jalapenos

    You may not believe this but you saved dinner tonight! I have all the ingredients for his except the jalapenos (which I don’t care for anyways). I can never think of what to do with over-sized pasta shells and only got these because they were buy 1 get 1. I cannot wait to try this!
