Recipe: Slow Cooker Chicken Enchilada Soup with Crispy Tortilla Strips

Chicken Enchilada SoupWe eat a lot of chicken enchiladas in our house, but tonight was my first time making Chicken Enchilada Soup. I found a few recipes that looked good and gave me an idea of what I wanted in mine, and this is what I made.  Everyone cleaned their bowls (even my picky 6-year-old!) and a few of us had seconds.  I’m glad we have some left over- I know what I’m having for lunch tomorrow!

Ingredients
  1. 1 pound chicken, cooked and shredded
  2. 1 (15 ounce) can diced tomatoes with green chilies
  3. 1 (15 ounce) can black beans
  4. 1 (10 ounce) can enchilada sauce (mild red sauce)
  5. 1 (14.5 ounce) can low sodium chicken broth
  6. 1 1/2 cups water
  7. 1/2 cup heavy cream
  8. 2 teaspoon garlic powder
  9. 2 teaspoon onion powder
  10. 2 teaspoon cumin
  11. 1 teaspoon chili powder
  12. 1 (10 ounce) package frozen corn
  13. 3 tablespoons chopped cilantro
  14. 1 cup Shredded Cheddar Cheese
  15. 5 small corn tortillas
  16. Olive oil
  17. 1 teaspoon salt
  18. 1/2 teaspoon cumin
  19. Sour cream, for garnish
  20. Cheddar cheese, for garnish
Instructions
  1. In your crock-pot, add the chicken, diced tomatoes, black beans, enchilada sauce, chicken broth, water, heavy cream, garlic powder, cumin, chile powder, corn, cilantro, and cheese.
  2. Cook on high 3 - 4 hour or low 5 - 6.
  3. Preheat oven to 350 degrees.
  4. Combine salt and cumin and set aside.
  5. Rub olive oil on both sides of the corn tortillas, sprinkle with salt/cumin mixture, and cut into thin strips.
  6. Place on a baking sheet for about 10 minutes. Keep an eye on the tortilla strips so that they don't burn.
  7. Serve soup garnished with more cheese, sour cream, and tortilla strips.
Notes
  1. Get creative with the seasoning of your chicken! We smoked a few chickens in our smoker earlier this week, so I used some of the leftover smoked chicken in this. It was SO good!

  6. Oooh I’m going to try this but put a few twists on it to make lactose-intolerant friendly! I think I could sub coconut milk for heavy cream! Yummy!! Thanks for sharing!! Anything in a slow cooker is a dream come true
