Spinach and Garlic Pasta with Pine Nuts- Full Time MamaThere’s a cooking show my husband and I love to watch called Lidia’s Italy. One day she made this amazing, easy pasta dish with spaghettinni, olive oil, garlic, and cheese-fancy cheese.  I was able to find the recipe online and I made it using an easier to find, less expensive cheese, but last time I made it I made a few changes. Plates were scraped clean and my family has made multiple requests for this to appear in upcoming menu plans.

  1. 1 pound spaghetti
  2. 6 tablespoons extra virgin olive oil
  3. 10 garlic cloves, peeled and sliced
  4. 6 cups fresh spinach, washed and chopped
  5. 1/2 cup pine nuts
  6. Β½ teaspoon (or more to taste) crushed red pepper
  7. 2 cups shredded Italian Cheese blend (or Parmesan and Mozzarella mixed if you can't find an Italian Cheese blend)
  8. parsley flakes for garnish
  1. Bring 6 quarts of salted water to a boil in an 8-quart pot over high heat. Stir the spaghetti into the boiling water. Return to a boil, stirring frequently.
  2. Cook the pasta, semi-covered, stirring occasionally, until tender, but still very firm, about 6 minutes.
  3. Meanwhile, heat 4 tablespoons of the olive oil in a large skillet over medium heat. Add the garlic and cook, shaking the skillet and stirring, until pale golden, about 2 minutes.
  4. Add the spinach and cook until wilted, about 3 minutes.
  5. Remove from the heat and add pine nutes and Β½ teaspoon crushed red pepper.
  6. Ladle about 1 Β½ cups of the pasta cooking water into the sauce. Add the remaining 2 tablespoons olive oil and salt to taste.
  7. Drain the pasta. If the skillet is large enough to accommodate the sauce and pasta, drop the pasta directly into the sauce in the skillet. If not, drain the pasta, return it to the pot and pour in the sauce.
  8. Bring the sauce and pasta to a simmer, tossing to coat with sauce. Cook until the pasta is coated with the sauce and done, about 1 minute. Remove the pot from the heat and toss in more cheese.
  9. Top with more crushed red pepper (if desired) and parsley flakes.
  10. Serve immediately.

  2. What a great recipe! I do not like crunchy in my pasta, but my spouse is the opposite, he would love the addition of pine nuts! I do love all things garlic though, it cleans your blood and is so healthy!

    • They sell them at all of our grocery stores, as well as at Costco. I’m shocked they don’t sell them at your stores! Hoping you can find them! πŸ™‚
