Recipe: Honey Garlic Chicken & Quinoa

Honey Garlic Chicken & QuinoaRice is a staple in our house, but this time I decided to make a dish using quinoa (thanks to my friend and fellow Delicious Dish Tuesday co-host Amanda from Coping With Frugality, who happens to have suggested quite a few recipes using quinoa). This was our first experience with Quinoa; the kids weren’t huge fans, but my husband and I loved it.  We also all loved this recipe so much that I’ve made it twice in the past week (last night with rice for the kids and quinoa for the adults).  If you like green onions they add a nice flavor, but it’s great without them too (still looks pretty amazing)!

Ingredients
  1. 1 cup dry Quinoa, cook according to package directions
  2. 3 tablespoons Virgin Coconut Oil
  3. 2 cloves garlic, minced
  4. 3 pounds Chicken Breast, cut into bite sized pieces
  5. 1/3 cup Honey
  6. 1 tablespoon Lime Juice
  7. 3 tablespoons soy sauce
  8. 1/4 teaspoon cornstarch
  9. Garlic Salt
  10. 1/2 cup Green Onion, chopped
Instructions
  1. Cook quinoa according to package directions and set aside.
  2. Melt coconut oil over medium heat in a large saucepan. Add garlic and cook until golden.
  3. Add chicken and cook until lightly browned.
  4. Whisk together honey, lime juice, soy sauce, and cornstarch in a bowl.
  5. Add the sauce to chicken and simmer uncovered for about 8 minutes, until chicken is cooked through, stirring often. Sauce will thicken a bit as it cooks.
  6. Serve chicken over quinoa, drizzling some of the sauce over the top.
  7. Season to taste with garlic salt.
  8. Finish with a handful of green onion.

    This looks yummy!! Thanks for the recipe! We use quinoa, too. I haven’t made it in a while, so I am looking forward to reintroducing it. 🙂 I cook it in my rice cooker. I put some sesame oil in and hear it up a bit, then throw in the quinoa and stir. Add liquid, a splash of rice vinegar sometimes, and cook! Stir in some scallions and it is great for a stir fry. 🙂
