Recipe: Creamy Ranch Pasta Salad

Creamy Ranch Pasta SaladIt’s almost summertime, which means lots of outdoor activities and lots of yummy BBQs and picnics! One thing I can’t get enough of when it comes to summertime is pasta salad.  Usually I buy the boxed stuff, but I decided it was time I made my own.  I’m loving it, and my family is too! In fact, I’ve made it twice since Monday… Yes, twice in a 4 day period.  Monday we had it with smoked pulled pork sandwiches, and tonight we had it with BBQ burgers. Perfect side dish to an already fantastic main dish!

  1. 12 oz bag of Wacky Mac Pasta
  2. 1 cup mayonnaise
  3. 1/4 cup sour cream
  4. 1/4 cup milk
  5. 2 tablespoons juice from peperoncini (I poured it from the jar)
  6. 1 oz package of Hidden Valley Ranch Dressing Mix
  7. 1/2 cup red onion, chopped
  8. 2- 2oz cans of slices olives
  9. 2 tablespoons sun-dried tomatoes, chopped
  10. 6 peperoncinis, chopped
  11. 1 cup cheddar cheese
  1. Cook pasta according to package directions.
  2. While pasta is cooking, combine mayonnaise, sour cream, milk, peperoncini juice, package of ranch dressing, onion, olives, sun-dried tomatoes, and perperoncinis in a large serving bowl.
  3. After pasta is cooked, drain and rinse with cold water until cooled, then pour pasta into dressing mix.
  4. Gently stir until combined, top with cheese and stir until just incorporated.
  5. Serve alongside your favorite summertime meal!
  1. This would be good with more veggies added, so feel free to get crazy and mix it up! I can't wait to try it with broccoli, bell peppers, raw zucchini... The possibilities are endless!
