Last week Lindsay from Broke and Bougie shared a recipe for Clean Eating Crockpot Meatballs and Squash Noodles.
I love the idea of using healthy squash as noodles! We have used spaghetti squash as noodles before and I love it, but that I hadn’t tried other squash as noodles before. I mentioned that to Lindsay and she said, “I used summer squash and it actually isn’t like spaghetti squash at all! The noodles aren’t as stringy or crunchyish.” There ya go- Take your pick! 🙂

Speaking of spaghetti squash, we eat it quite a bit around here. It’s cheap and it’s tasty. However, it wasn’t too long ago I feared spaghetti squash. I had no idea how to cook it, I wasn’t sure if I’d like the taste… I’m sure glad I learned how, because we love it! Try my recipe for Easy Spaghetti Squash!
