Recipe: Chicken Waldorf Pita Pockets

Chicken Waldorf Pita PocketsI could be a pretty picky eater as a kid, but this was one of the recipes my mom made that I couldn’t get enough of. I loved it. I have no idea where she got this recipe from, but even as an adult I still can’t get enough. My husband is not a big fan of “sweet chicken”, and though he will eat it he’d prefer I make it for lunches when he’s not joining us… So I do! 🙂 My kids love when I make this recipe and there are rarely any leftovers; plus, it’s a nice change from our usual lunches.

Ingredients
  1. 1- 20oz can crushed pineapple in juice
  2. 1- 12.5oz can chunked chicken breast
  3. 1 red apple, cored and chopped
  4. 1 green apple, cored and chopped
  5. 1/3 cup onion, chopped *
  6. 1 cup sliced celery (optional)
  7. 1/2 cup dried cranberries (optional)
  8. 1 cup mayonaise
  9. 1/2 teaspoon vanilla extract
  10. 1/2 teaspoon fresh grated lemon peel (optional)
  11. 8 to 10 pita bread rounds
  12. Lettuce Leaves
Instructions
  1. In a small bowl, drain the pineapple well, pressing out excess juice. Save 1/4 cup juice and discard the rest.
  2. In a large bowl, combine pineapple, chicken, apples, onion, celery (optional) and dried cranberries (optional).
  3. In the small bowl, whisk together mayonnaise, pineapple juice, vanilla, and lemon peel (optional). Pour over chicken mixture and toss well.
  4. Cut pita rounds in half.
  5. Line each pita with lettuce. Spoon chicken mixture into pocket and serve.
Notes
  1. *I prefer red onion but you may use your favorite kind
