Last week Debbie from One LIttle Project shared a recipe for Spicy Thai Cucumber Salad. We LOVE cucumber salad, but I’ve never had a Thai inspired cucumber salad before. Even better, this one uses a spiralizer to make the veggies even more fun to eat! I don’t have a spiralizer yet, but I’m definitely needing to get one. This recipe has lit a fire under me even more.

The Creamy Cucumber Salad recipe we normally make is a recipe that’s been passed down on my husband’s side. It took a while to get an actual recipe with measured ingredients because everyone just eyed it and made it from memory. We love to have this, especially in the summertime! It’s great with red onions, but sometimes we sub bell pepper and it’s just as delicious.
