Mary and I had a bit of a Fall Break last week. Okay, in all honesty I completely spaced DDT. I feel like I’ve been in a fog for weeks now. Maybe I’m in denial that this year is actually almost over. Time is flying so fast I can hardly keep up! In any case, the last DDT had a ridiculous amount of amazing recipes and I have a list of must make recipes from it. But since the weather is cooling off here in Arizona and I’ve had soup on my mind, I want to share this awesome Baked Potato Soup from Emily at A Little Bit of Emily. Nothing beats a good soup, and potato soup is one of my faves. That bacon on top (extra crispy please!) totally makes it. Adding this to my menu plan!

One of my favorite soups to make (because it’s delicious and easy!) is my Slow Cooker Chicken Enchilada Soup. It’s especially good with a bit of the crispy tortilla strips on top!
